Recipe for Thai Chicken Curry:

  • In a pot add some oil and fry the chicken
  • Add in cut eggplant, carrots and bell peppers
  • Once the chicken and vegetables are cooked add the sauce and let it simmer for a minute
  • Serve with Jasmine rice.
